Stir-fried water spinach

What you will need.
2 tablespoon oyster sauce (sounds nasty but believe it or not, almost all Asian stir-fried dish use this)
1 teaspoon fish sauce (put it on after it is done [like when put it on low heat], or else it will smell like fish)
1 tablespoon yellow bean sauce (optional)
1/2 sugar (or more if needed)
2-3 garlic cloves (smash it by a cooking hammer and then chop it into little piece to get the taste)
350 g (12 oz) water spinach, cut into 5 cm (2 inch) lengths
red bell pepper or hot pepper (for decoration)
crush red pepper for spiciness

Here's how we do it...
Heat the oil in a big frying pan or a wok. Then stir-fry the garlic over medium heat until it is light brown. Then add the water spinach and the seasoning (oyster sauce, sugar, yellow bean and red pepper.). Stir-fry it for 2-3 minutes or until it is done. How you know it is done is by taking a bite at it and if it is very crunchy, it needs a little bit longer. I like mine to be more soft. Then serve it with hot rice :)

I made this today. This water spinach is one of my favorite food. In Thai, it is called pad-phak-bung.It is rich in iron and has planty of vitamin a which is good for eyesight. So I hope you guys enjoy this!

Ps. You can find the water spinach in a farmer market or at a local Asian market.
